Optimising bioactive content of Australian stingless bee honey

Trehalulose is a functional food ingredient with several patents in place particularly for blood glucose control. Trehalulose occurs naturally in native stingless bee honey and provides the opportunity to provide an authenticity marker for native stingless bee honey as well as demonstrating the potential therapeutic value . This investment will work with the Native Stingless Bee industry to develop a recognised food standard based on the presence of trehalulose as a marker for this premium product.
