Understanding the formation and fate of key volatile compounds is a core capability that requires continuation in our sector, as these compounds provide researchers and producers with quality targets for improvements in vineyard and winemaking practices. Volatiles contribute specific varietal and regional characters and contribute greatly to the overall in-mouth sensory experience. The volatiles of wine can be the mark of its quality for a consumer when drinking or the basis of its rejection and are influenced at every stage of handling or processing. At the core of an innovative sector is the ability to understand and measure key volatiles, while developing practices to influence or control flavours associated with wine quality and style.

Using patented scientific technology the project aims to enable producers to scan wool in-shed and detect micron, colour and crimp of the wool, by creating machine learning models accessed by affordable non-connected devices. On-line measurement of intramuscular fat in hot lamb carcases

An imaging needle using an established medical technology has established a positive proof-of-concept to measure Intra Muscular Fat (IMF) percentage in an un-cut lamb carcase. Intramuscular fat contributes positively to the juiciness and flavour of lamb and is a useful indicator of eating quality. This project will assist in refining the pre-commercial prototype probe under development, validate the precision and accuracy of IMF measurement and release a prototype device to an early-adopter industry partner.

Impacts of COVID-19 on the Australian Seafood Industry: Extending the assessment to prepare for uncertain futures

In March 2021 the FRDC published an initial rapid assessment of the impacts of COVID-19 on the Australian seafood industry from January - June 2020, that considered direct and indirect effects of disruption to seafood production, supply chains and markets during the initial period of the pandemic, and the availability of data to support rapid assessment. This project aims to produce a more comprehensive follow-up Impact Assessment Report, that will inform the development of a guideline to assess the economic and social effects of large-scale, multi-level risks to fisheries and aquaculture in the future.

This project continues funding for the National Fruit Fly Council (NFFC), which consists of federal and state governments, industry representatives and research funders who strategically coordinate fruit fly management in Australia. Fruit fly is one of the biggest trade barriers for horticulture products. In 2016 the cost to Australia was estimated to be $300 million due to control measures and international trade restrictions.

Effective control of Listeria on rockmelons through alternative post-harvest treatment methods

This project is determining the optimum postharvest strategies to reduce the risk of rockmelons being contaminated by listeria, a bacteria found widely in soil, water and vegetation that can cause the disease, listeriosis. Trials will evaluate the effectiveness of five common sanitisers against listeria and make best practice recommendations for growers.
