Harnessing the synbio potential of Australia’s stingless bees, the first step.

Stingless bees have evolved a unique capacity to efficiently isomerise the sucrose found in nectar to the low GI yet highly soluble disaccharide trehalulose. This project seeks to exploit this capability for commercial benefit and ultimately to use cane sugar (sucrose) as an inexpensive feedstock to produce the high value alternative sugar trehalulose to provide greater economic outcomes for the sugar industry.
