Salmonella infection (salmonellosis) is a type of gastroenteritis caused by Salmonella bacteria. It remains a significant public health issue in Australia, and foods of animal origin are most frequently considered to be the source of infection in humans. This project will conduct a molecular risk assessment of Salmonella in red meat in order to prepare for potential changes to regulations in the USA that may impact Australian exporters.

To improve regulatory efficiency and consistency in Australia's livestock export trade, this project aims to develop standardised documentation for the declarations required in major markets, beginning with the South East Asian cattle markets.
