Measurement of pH in high intramuscular muscle

Muscle pH is measured on all MSA graded carcases as an indicator of eating quality. This project will provide verification of current processes and devices used in MSA grading to ensure they are optimal for usability and accuracy. The project will consider the variability which exists in the cattle type supplied through MSA grading as well as the commercial practices in place.
