Remastering Cassava in Australia

Early work on cassava in Australia focussed on the crop as a source of ethanol and later as feed for animal industries. More recently there is growing interest in cassava as an ingredient in human foods with opportunities to supply vegetable protein and meat substitute products. 

This project aims to review and update information regarding the Australian cassava industry, including revisiting the agricultural viability of cassava production in northern Australia.  It aims to better understand the harvesting and postharvest processing of leaf and tuber to provide useful ingredients in food manufacture.
