LEAP4Beef - Module L4B06 Project 0 - Chuck Chining cell concepts

It has been identified that there is a need to improve sustainability of the fabrication process, through; decreasing waste, increasing the bottom line, increasing staff safety, increase employment demographics and increase in quality and specifications. LEAP4Beef is focused on deboning and packing of chilled beef carcasses and in 2024 the first pre-production in plant concept prototype cell as part of this strategy was successfully developed and installed for demonstration at JBS Brooklyn assessing the required automation principles to achieve automated striploin chine processing. This “real-world” processing demonstration and ongoing production trials has proven invaluable at informing LEAP4Beef automation strategies. The intent of this project is to adapt prior learnings from the L4B01 Module - Striploin Chine Bone Removal unit to develop and test methods for chine removal on the Chuck. This work will be conducted at Scott Technology workshop and trialled at site as an extension activity where possible in collaboration (and assistance from) JBS Brooklyn site. The success of this project will provide the steering group including Scott with the information required to determine the first stage requirements for development of a L4B06 Chuck chine removal concept and inform the LEAP4Beef strategy moving forward.
