Kokumi flavour ingredient from beef-lung – development of pilot scale processing

this project is an extension of earlier work by AgResearch on kokumi extracts. Preliminary research by AgResearch and AMPC found that kokumi-rich beef lung extract (Lung-G) enhances the flavour of beef patties. This project aims to scale up Lung-G production from lab to pilot plant, ensuring both the scalability and manageability of the process while preserving flavour quality. Additionally, financial feasibility of scaling up process will be assessed through manufacturing cost-benefit analysis.
