Fingerprinting Traceability for Beef Primals in Production
Traceability of primals post boning is a becoming increasing important to industry. This project is an extension of previous work to trial a technology that focuses on the deployment of a camera system that uses AI technology to assign a unique identifier to beef primals based on visual characteristics, assigning a unique “Fingerprint” to the primal. This fingerprint can then be used to track the primal at various stages of the production process. The technology is comparable to facial recognition, but specifically for beef primals and sub-primal cuts, identifying unique features. The system will be trialed at 2 locations, in a production environment, on multiple primal types.
Following this, additional testing will be done to ensure boxed primals match label description for a small number of product SKUs.
