Addressing barriers for adoption of RCT® by beef processing plants

Large scale beef processing plants in Australia will be able to access improved carcase and offal attributes delivered by Rinse & Chill® (RCT) through development of a high-speed beef rinser. Current RCT® application speeds prevent large processors from accessing benefits. This project will design, test and build a high speed prototype that will be installed in a mid-speed processing plant. A second prototype will be built with learnings from the first prototype for a high-speed, beef processor. Learnings on equipment maintenance requirements, staff training and onsite data collection will be undertaken to facilitate continuous improvement and understand the impact of using RCT® at a high throughput beef processing plant.
