At the heart of our methodology lies the analysis of stable isotopic ratios in food components like carbon, hydrogen, oxygen, nitrogen, and sulfur. These gases are funneled into an Isotope Ratio Mass Spectrometer, where they are measured and categorized by weight to determine the isotopic ratios.
