Industry challenge

Modern food systems are built around efficiency, shelf life and yield, but this approach has created a significant blind spot: value loss. Across many plant-based food supply chains, between 30–50% of inputs are discarded during processing. Skins, seeds, pulp and fibre, often rich in micronutrients, polyphenols and functional compounds, are routinely treated as waste or low-value by-products.

At the same time, nutrition innovation has increasingly leaned on isolated ingredients and extracts, stripping food back to singular components rather than leveraging its natural complexity. Emerging nutritional science shows that many beneficial compounds work best when delivered together, within intact food matrices, where fibre and cellular structures play a critical role in bioavailability and function.

This disconnect represents both a sustainability challenge and a commercial opportunity. Valuable nutrition is being lost, food waste remains stubbornly high, and processors are missing chances to create new, premium product categories. Addressing this challenge requires rethinking food processing itself, not as extraction, but as whole-ingredient utilisation that unlocks value already embedded in the food system.

Current opportunity

Whole. is commercialising a proprietary platform, WINX® (Whole Ingredient Nutrient Extraction), that enables entire plant ingredients to be transformed into highly bioavailable, functional food formats, with up to 100% ingredient utilisation. The current opportunity is to partner with organisations who can support the next phase of scale, application and market expansion.

Whole. is seeking partners and investors who can contribute commercially, strategically or through supply chain integration. This includes food and beverage manufacturers looking to upgrade ingredients or product formats, organisations with underutilised agricultural or processing streams, and investors aligned to capital-efficient, category-creating food innovation.

Partners would gain access to a validated, zero-waste processing platform, opportunities to co-develop new functional products, and pathways into premium nutrition markets using existing inputs. Whole. is a Perth-based food technology company, over several years, the team has worked with leading global food and ingredient companies including Kagome, Kerry Group and Noumi to validate the WINX® technology across multiple ingredients and applications.

The company has received backing from Artesian Alternative Investments and the GRDC through its GrainInnovate Fund, supporting technology validation and early commercial pathways. These collaborations demonstrated not only the technical robustness of the platform, but also the scale of the opportunity to rethink how food value is created, retained and monetised through whole-ingredient processing.
