The effect of lairage duration on carcase quality, yield and microbiological status
The purpose of lairage is to rest sheep and cattle prior to slaughter, to recover from loading and transport. This project will further develop an earlier pilot study that found that a shorter time in lairage, involving transport and slaughter on the same day, increased carcase yield and meat quality and returned an economic benefit of at least $20/head.
