MSA Beef Model Expansion: Sensory evaluation
The project is designed to aid in quantifying the eating quality difference between steers and entire males or bulls based on the current MSA model prediction. The project aims to sensory evaluate 18 animals ‘young bulls’ that have been purposefully produced for meat production, collecting 34 primals for each carcases and testing 5 cook methods against 2,400untrained consumers.
