Maximising the value of the NSW Long Fin Eel catch through a whole of supply chain approach - Stage 1

There is a large unmet demand for eels in Asian markets with reduced tariffs through trade agreements enhancing the economic viability of targeting those markets. While the live market has a definite preference for particular eels, there are opportunities to transform eels not suitable for live sale into new product formats. To assess this possibility, the current project will develop up to five product formats from New South Wales wild caught eels and test them in two markets. Should the product formats be demonstrated to add value, the feasibility and options for commercial scale will be assessed.
