Lamb MSA Mark II Limited Cut x Cook
This project aims to conduct consumer sensory testing of cuts from lambs from the INF and resource flocks, primarily from Katanning WA. The resource flocks are a representation of industry sires across all breeds. This research will build the reference population which is essential for genomic tools to work in industry. The project will build upon eating quality data for more muscles and cook methods required for MSA Sheep meat model development.
