A practical means to accelerate beef ageing and sustain acceptable eating quality and safety: Chilled storage temperature manipulation

This project aims to test an available intelligent packaging technology in this function for potential adoption in industry. Furthermore, this project will determine other yield loss parameters associated with temperature-control for accelerated ageing.

The project could establish the scientific basis for industry guidelines for the cost-effective and safe acceleration of beef ageing with chilled storage temperature manipulation.
